I personally prefer coconut flour over almond flour in some recipes. This wouldn’t be one example but some people have nut allergies and I receive so many request to make more coconut flour alternatives. These biscuits lacked flavor when simply adding butter. So, to crank it up I added cheese, garlic and parsley. Now, they give maximum flavor but with that typical coconut flour texture. The addition of arrowroot powder definitely helps add a moisture to the biscuit that wouldn’t be there. I would add something with these such as sausage gravy or even some type of syrup.

How To Make Coconut Flour Biscuits

  1. First, preheat oven.
  2. Next, mix all the dry ingredients. Using your coconut flour, tapioca powder, salt, baking powder. If you want the best flavor toss in garlic and parsley as well.
  3. Then, in a small pot melt butter or coconut oil. Add in cheese once oil/butter has melted.

  4. Quickly, add in dry ingredients and mix around as much and as fast as you can. Most will mix but some might not and that’s fine.
  5. In a bowl, break apart the cheese and coconut flour blend. Then, add in eggs and with an hand mixer beat the eggs into the mix. A few pieces might not break down but that’s fine because they will be clumps of cheese in your coconut flour biscuits.
  6. Next, you will take a tablespoon and shape your biscuits with your hand. Not super big but you should get 9 biscuits at a minimum.
  7. Bake in preheated oven for 15 minutes.

  • Garlic, herbs and cheese are a mix in that gives the biscuits a pleasant flavor. You can skip it then add something to sweeten them up. You can eat them almond this method takes away the majority of the dry texture you normally get. After they’re cold heat them up a little before eating, if not grab some water.
  • Coconut flour is very dry. If you are new to coconut flour there is a huge difference than any other flour. I have a YouTube video explaining the difference and what to expect.

Ingredients
 

Dry Ingredients

  • 1/2 cup coconut flour
  • 1 tablespoon tapioca flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 3 large eggs
  • 3 tablespoon unsalted butter or coconut oil

Mix in's

  • 1/2 cup sharp shredded cheese
  • 1/2 teaspoon parsley ((optional))
  • 1/2 teaspoon garlic ((optional))

Instructions
 

  • Preheat oven to 375°F
  • Mix all dry ingredients together. If adding garlic and parsley add those in now
  • In a small pot add the butter/oil then melt down along with the cheese
  • After butter/oil are mixed well toss in dry ingredients quickly as in video. Most will absorb but a little may not and thats fine.
  • Using a hand mixer blend together. There may be some pieces that dont blend in but thats fine they will turn into chunks of cheese when you bake them
  • Chop up the harded cheese and coconut flour mix then add in eggs
  • Next, shape your biscuits. Not too big you should get 9 minimum
  • Bake for 15 minutes then serve
