Ingredients needed
- Sweet potatoes
- Rice
- Chipotle paste
- Cilantro
- Brown sugar
- Lemon
- Lime

What is chipotle paste?
We all know tomato paste, but chipotle paste is the more flavorful cousin. The paste is made from chipotle peppers and infuses the food with that smokey flavor. It’s not spicy. You can find it in the store but the well-known brand Better Than Bouillon has a version as well.

Making the chipotle sweet potatoes and rice recipe
- To start, slice up the potatoes into cubes.
- Place a pot of boiling water and cook the rice according to the package instructions.
- In a frying pan with a lid, add a little oil then bring to medium heat. Place the cubed sweet potatoes in then place the lid on. Return every 5 minutes or so and give the potatoes a toss. Important, when you notice the sweet potatoes softening, test them. When you can push a fork through them with a little resistance they are done. You do not want to cook them to the point where they begin mashing and falling apart.
- In the sweet potatoes, add in the chipotle paste, brown sugar and the seasoning. Mix everything together until everything you added is evenly combined then turn off the stove. Add salt to taste.
- Grab the cooked rice and place it in a bowl. Add in the cilantro, squeeze the lemon and lime then add salt to taste.
- Lastly, you can serve the dish. Place the rice on a plate then serve with a topping of sweet potatoes.

- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder

- 1/2 lime, squeezed
- 1/2 lemon, squeezed
- salt to taste
