Made with shredded chicken, cream cheese, buffalo sauce and a little razzle dazzle of ranch to go in the mix. Healthy choices aren’t hard to come across at all. Simple use gluten free or low carb tortillas and there’s nothing stopping you from making these.
Make Ahead
For those that like to make recipes ahead of time these are perfect. Simply, you have to make them before you serve. In order to cut the tortilla without causing the inside to ooze everywhere the cream cheese must harden. If making these ahead wrap them in Saran Wrap or place in a sealed container. Store these up to a week in the refrigerator of freeze for up to a few months.
What Type Of Chicken
In this recipe I used chicken breast that I boiled, seasoned and shredded myself. When pressed on time this isn’t the easiest option. Luckily, canned chicken or store bought rotisserie chicken can be used. Just buy it and shred it up. Now, you’ve saved about 30 minutes ahead of making the recipe.
How To Make Buffalo Chicken Pinwheels
To start, you need shredded chicken and softened cream cheese. Shredded chicken can be boiled with lid on for 20 minutes then easily shredded. Or, you can get a rotisserie chicken from the store or canned chicken and shred it yourself.
Next, you’ll need a good buffalo sauce. You can use things such as Frank’s red hot, Texas Pete or Louisiana hot sauce but I prefer Primal Kitchen. The flavor is rich, healthy ingredients and just really tasty. But, any buffalo sauce will do.
Combine shredded chicken, cream cheese and sour cream. Then, add in buffalo sauce and the optional ranch seasoning. Mix well.
Take tortilla shells and spread the buffalo chicken across it. Don’t overstuff so it won’t ooze out during rolling. Roll tortillas and leave with the flap down so it doesn’t unravel. If it does secure it with Saran Wrap or something it’s not difficult.
Next, place in freezer or in refrigerator. You have to do this in order to get those clean cut lines in the photos. The cream cheese must harden back up for the best cut. I left mine in the freezer about 20 minutes do to time. You can easily make ahead and store them overnight in the refrigerator.
Lastly, remove then cut and serve. If you froze them, give them a little time to thaw. No one wants a frozen pinwheel.

Ingredients
- 8 ounces shredded chicken
- 4 ounces full fat cream cheese
- 1/4 cup sour cream
- 6 tablespoon buffalo sauce (or 1/4 cup + 2TB)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions

- Roll tortilla closed and lay on the flap side so that it doesnt unwravel. Chill until cream cheese has hardened. If storing overnight wrap in saran wrap.
