Buffalo chicken pinwheels are a great bite sized appetizer that's not only delicious but easy to make. Made with little ingredients but big taste these are wrapped in a tortilla shell then served for a great party snack. To start, you need shredded chicken and softened cream cheese. Shredded chicken can be boiled with lid on for 20 minutes then easily shredded. Or, you can get a rotisserie chicken from the store or canned chicken and shred it yourself. Note, if you get chicken already seasoned do not add 1/4 tsp salt and pepper
In a mixing bowl combine all ingredients and mix well
Next, lay out tortilla and spread filling leaving room to fold. If you do over fill just pick it up and put it in the next one
Roll tortilla closed and lay on the flap side so that it doesnt unwravel. Chill until cream cheese has hardened. If storing overnight wrap in saran wrap.
Remove then cut into slices and serve. If pulling from the freezer allow them to thaw afterward before serving. Nutrition facts below are for the filling only!

Helpful Recipe Tips
Don't overthink the shredded chicken. But, I do advise to make sure it is seasoned. Whether pre-seasoned or you season it yourself.
Ranch seasoning is optional. It personally washes out the flavor but ranch and buffalo aren't a bad combo at the end of the day.
Don't overstuff tortilla shells prior to rolling and be sure to chill before cutting. You can speed up time if placed in the freezer but they have to chill for a clean, smooth cut.
