How To Make Bacon Cheeseburger Meatloaf

Ingredients needed

  • Ground beef
  • Breadcrumbs
  • Egg
  • Worcestershire sauce
  • Dill relish
  • Onion
  • Sharp cheddar cheese
  • Bacon
  • Ketchup
  • Brown sugar

Tips for using the bacon

In the photos I created a bacon weave for the top of the meatloaf. You can just lay the bacon across and it’ll work the same. I only did the weave because I wanted to be fancy.

Making the bacon cheeseburger meatloaf

  1. To start, in a large bowl. Mix together all the ingredients for the meatloaf. Mix just until everything is evenly combined. Cover the bowl then sit the bowl in the refrigerator for 30 minutes.
  2. Preheat the oven to 350F.
  3. Grab a sheet pan and line it with parchment paper. Remove the bowl from the fridge and shape the meatloaf on top of the sheet pan.
  4. Next, place the bacon on top of the meatloaf in layers if you do not create the weave pattern I mentioned in the tips above.
  5. Place the bacon cheeseburger meatloaf in the oven for 45 minutes. While baking make the sauce topping.
  6. At 45 minutes, remove the meatloaf and cover in the sauce. Place back and bake an additional 15-30 minutes or until the internal temperature is at least 145F. If you don’t want any red, go to 160F.
  7. When the meatloaf is done cooking allow it to rest at least 20 minutes before slicing and serving, enjoy.

Meatloaf ingredients

  • 2 pound 85/15 ground beef
  • 1/2 medium yellow onion, diced
  • 1/2 cup dill relish
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 2 cup shredded cheddar cheese (regular or thick-cut, avoid fine)
  • 1 pound bacon
  • 1.5 teaspoon salt
  • 1 teaspoon black pepper

Topping

  • 1/2 cup ketchup
  • 1 tablespoon brown sugar

Instructions
