How To Make Crockpot Corn Casserole

Ingredients needed

  • Jiffy cornbread
  • Whole sweet corn
  • Cream-style corn
  • Butter
  • Eggs
  • Milk
  • Granulated sugar
  • Sour cream

Important tip before starting

You’ll be tempted to put the crockpot or slow cooker on the high setting to speed up the process. Do not do this! You’re attempting to bake something in the crockpot, which is was not designed to do efficiently. The low setting is perfect because it’ll allow the inside of the corn casserole to rise and cook before the outside burns.

Making the crockpot corn casserole

  1. To start, mix the ingredients for the cornbread topping in a bowl.
  2. Next, add in the creamed corn and whole corn into the crockpot.
  3. Now, pour the cornbread mix in the crockpot and mix everything together.
  4. Place the crockpot on low for 5-6 hours. This will vary from crockpot to crockpot. The casserole is finished with the center is firm. If you touch it and it doesn’t bounce back, instead it sinks in, you’ll need a little more time.
  5. Once the casserole is done cooking, allow it to cool a bit before serving, enjoy.

Cornbread topping

  • 2 boxes jiffy cornbread
  • 2 large eggs
  • 1 cup milk
  • 1/3 cup granulated sugar (optional)
  • 4 tablespoon butter, melted
  • 1 cup sour cream

Other ingredients

  • 2 15 ounce cans of cream-style corn
  • 2 15 ounce cans of whole corn, drained & rinsed
