- Chopped rotessire chicken
- Cream cheese
- Sharp cheddar cheese
- All-purpose flour
- Buffalo sauce
- Butter
- Milk
- Ranch seasoning

Although, this recipe is made to be super easy. You cannot use pre-shredded cheese. You’ll need to grate your own cheese from the block for the best recipe.

Making the buffalo chicken mac and cheese recipe quickly
- The first thing you’ll need to make is the cheese sauce. You’ll want that ready before making the macaroni.
- In a large pot, melt the butter. Once melted, add in the flour then whisk until the smell starts to get very nutty.
- Next, pour in the milk and continue to stir until you start to see thickening and a few bubbles. Once the mix has thickened, turn off the heat but leave the pot on the hot stove eye.
- Add in the cream cheese and shredded cheese.
- At this point, cook the macaroni according to the package instructions.
- In the cheese sauce, continue to stir until all the cheese has melted into the sauce. Only after the cheese has melted add in the ranch seasoning pack and the buffalo sauce.
- Now, once the pasta is done cooking, drain it and do not rinse it. Toss it directly into the cheese sauce along with the (hot not cold) chopped chicken. Give everything a good stir.
- The cheese sauce will have cooled a bit but taste for salt. Be careful because the noodles are extremely hot.
