Bacon Cheeseburger Meatloaf

Ingredients

Meatloaf ingredients

  • 2 pound 85/15 ground beef
  • 1/2 medium yellow onion, diced
  • 1/2 cup dill relish
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 2 cup shredded cheddar cheese regular or thick-cut, avoid fine
  • 1 pound bacon
  • 1.5 teaspoon salt
  • 1 teaspoon black pepper

Topping

  • 1/2 cup ketchup
  • 1 tablespoon brown sugar

Instructions

  • To start, in a large bowl. Mix together all the ingredients for the meatloaf. Mix just until everything is evenly combined. Cover the bowl then sit the bowl in the refrigerator for 30 minutes.
  • Preheat the oven to 350℉.
  • Grab a sheet pan and line it with parchment paper. Remove the bowl from the fridge and shape the meatloaf on top of the sheet pan.
  • Next, place the bacon on top of the meatloaf in layers if you do not create the weave pattern I mentioned in the tips above.
  • Place the bacon cheeseburger meatloaf in the oven for 45 minutes. While baking make the sauce topping.
  • At 45 minutes, remove the meatloaf and cover in the sauce. Place back and bake an additional 15-30 minutes or until the internal temperature is at least 145℉. If you don't want any red, go to 160℉.
  • When the meatloaf is done cooking allow it to rest at least 20 minutes before slicing and serving, enjoy.
