When this salad was first introduced to me I was very curious. Why do people like this salad, what’s special about it?
Then, I had the luck of trying it for the first time. Now I get it!
First, the textures are very exciting in the mouth. You go from crunchy to crisp while experiencing each flavor.
The sweetness of the watermelon, the saltiness of the feta and the almost minty flavors in the arugula melt together with a sweet, tangy dressing.

How To Make Watermelon Arugula Salad
Do you have these ingredients already
- Watermelon
- Arugula
- Feta
- Pickled red onion
- Olive oil
- Balsamic Vinegar
- Agave syrup
- Apple cider vinegar
Quick tip before starting
This is a recipe I don’t suggest you put the recipe together too far ahead of time. As the watermelon sits it releases a lot of water washing away the flavors in the salad.
The salad can be prepped ahead of time but leave the watermelon to the side. That way right before serving and adding the dressing you can drain any excess water that builds up in the bowl.

Making the recipe
- First, cut or buy cubed watermelon. While you are prepping the other ingredients, place the watermelon in a bowl to the side.
- In a small bowl or measuring cup, measure out 1/4 cup of olive oil. Then, add in balsamic vinegar, agave syrup and apple cider vinegar.
- Then in a large bowl, add arugula, feta, pickled onion and give that a toss. The onions and feta will want to settle at the bottom.
- Next, add in the cubed watermelon then pour the dressing over the salad. Give everything a good toss. As mentioned the feta and onions will try to settle at the bottle so make sure to bring them up to the top.
- Serve immediately.
Storing the watermelon salad
This is not a recipe to be frozen and honestly as it continues to sit more water will come out of the watermelon washing the flavors away. This salad can keep for 3-4 days but its best on the first day.
