Watermelon cucumber salad is the perfect combination of salt, sweet and refreshing. Top with a sweet lemon dressing and crumbles of feta cheese.
Ingredients you’ll need
- Watermelon (seedless)
- Mint
- Cucumber
- Agave
- Feta Cheese
- Lemon
Quick tips before starting
- Deseed the cucumbers. The watermelon will release a lot of water by itself and removing the seeds from the cucumber will help them not do the same.
- If making ahead, leave the watermelon by itself. This isn’t a recipe you want to make and allow it to sit in the refrigerator too long due to the high water content in the watermelon. Cut the watermelon up then drain it later before tossing in the other ingredients.
How to store leftovers
When there are leftovers, simply cover with plastic or an airtight lid. This salad will keep maybe 2-3 days but the texture of the watermelon will change after some time.
