  • Watermelon (seedless)
  • Mint
  • Cucumber
  • Agave
  • Feta Cheese
  • Lemon

Quick tips before starting

  • Deseed the cucumbers. The watermelon will release a lot of water by itself and removing the seeds from the cucumber will help them not do the same.
  • If making ahead, leave the watermelon by itself. This isn’t a recipe you want to make and allow it to sit in the refrigerator too long due to the high water content in the watermelon. Cut the watermelon up then drain it later before tossing in the other ingredients.

Making the watermelon cucumber salad

  1. To start, cube the watermelon or you can buy watermelon already cubed. Make sure you remove the rind.
  2. Next, split a cucumber the long way and use a spoon to scoop out the seeds. Then slice the cucumber into smaller pieces.
  3. Then, roughly chop mint leaves.
  4. In a large bowl, add cubed watermelon, cucumber, mint and mix them together.
  5. To the side, in a small bowl mix a juiced lemon and agave syrup together for a light dressing.
  6. Pour the dressing into the bowl with the other ingredients and mix well.
  7. Lastly, garnish with feta cheese before serving. By taste, you may want to add more feta if you really enjoy the flavor.

How to store leftovers

When there are leftovers, simply cover with plastic or an airtight lid. This salad will keep maybe 2-3 days but the texture of the watermelon will change after some time.
