Watermelon arugula salad starts off as an odd combination that blows people away with flavor. Refreshing for summer and a ton of flavor this is a great salad to impress others.
First, cut or buy cubed watermelon. While you are prepping the other ingredients, place the watermelon in a bowl to the side.
In a small bowl or measuring cup, measure out 1/4 cup of olive oil. Then, add in balsamic vinegar, agave syrup and apple cider vinegar.
Then in a large bowl, add arugula, feta, pickled onion and give that a toss. The onions and feta will want to settle at the bottom.
Next, add in the cubed watermelon then pour the dressing over the salad. Give everything a good toss. As mentioned the feta and onions will try to settle at the bottle so make sure to bring them up to the top.
