How To Make Walking Taco Casserole

Ingredients needed

  • Ground beef
  • Onion
  • Cream cheese
  • Taco seasoning
  • Rotel tomatoes
  • Doritos or Fritos
  • Shredded cheese
  • Roma tomato
  • Shredded lettuce
  • Mexican sour cream

Helpful tips before starting

  • Do not add the corn chips into the oven. Putting them into the oven with the steaming meat will only make them soft. The purpose of the Doritos are to be crunchy. Now if soggy chips is your thing, enjoy yourself.
  • Use the toppings you enjoy the most. This is what makes tacos so special. I am going to put suggestions for the walking taco casserole but I encourage customization.

Making the walking taco casserole

  1. First, preheat the oven to 400F then brown the hamburger meat in a skillet on the stove top. Do not season it with salt and pepper. When the ground beef is cooked remove it from the pan.
  2. Next, add in the diced onion and Rotel tomatoes. Cook until fragrant and onions are soft then add back in the ground beef.
  3. Then, add in the taco seasonings plus 1 cup of water. Cook the taco mix until the seasonings has thickened then add in the cream cheese. Watch the heat after adding in the cream cheese. You may be able to use the heat leftover and turn the stove off completely to melt the cream cheese.
  4. Now, if you aren’t using an oven safe pan transfer the taco mix to a baking dish. Top with cheese then place in the preheated oven for 15 minutes or until cheese is melted.
  5. While the walking taco casserole is baking prep the fresh ingredients.
  6. Immediately when you remove the casserole from the oven top it with the ingredients and allow it to cool. While cooling the heat will radiate and the top ingredients should not be very cold minus the lettuce.
  7. Lastly, after cooling serve.

Why is it called walking taco?

I am not sure if it started at the fair or amusement parks. But, people would crush up a bag of Doritos or Fritos then add in taco meat, cheese and fresh tomatoes. Honestly, whatever else was available. The ingredients would be added in the bag of chips so you could walk away with them and eat on the go. Walking tacos was born.

Ingredients
 

  • 1 pound ground beef
  • 1/2 medium yellow onion
  • 1 can of Rotel tomatoes, drained & rinsed
  • 2 packets taco seasoning
  • 4 ounces cream cheese
  • 1 cup shredded cheese
  • 1.5-2 cups Doritos or Fritos, crushed
  • 1-2 cups shredded lettuce
  • Mexican sour cream

Optional toppings

  • 2 roma tomatoes, diced
  • pickled jalapeno
  • cilantro, chopped
  • guacamole

Instructions
