Can you use frozen or canned peaches?
Canned peaches would be a pain to prepare and chop but if you have the patience you can use them. For frozen peaches I think they could work as well. I recommend chopping them while frozen and making the recipe that way. It’s a method used in restaurants like in this corn salsa recipe and the frozen ingredients work well with the salsa.
