First, make the quinoa according to the instructions on the package.
While the quinoa is cooking prep the tomatoes, olives and crumble the cheese if the feta is still in the block form.
Now, chop the basil and remove the thyme from the stems. In a small bowl whisk together the olive oil, red wine vinegar, apple cider vinegar, chopped herbs, salt and pepper.
When the quinoa has had a chance to cool, toss in all the ingredients including the dressing. Give everything an even mix.
Lastly, salt and pepper to taste. Serve warm or cold.
