How To Make Keto Muffins-Step By Step
- First, these muffins are full of strawberries. But, you have to prep them first. Blend or finely chop the strawberries then cook them. See below in tips.
- Next, preheat the oven and melt your butter. You’ll want your butter to cool a bit before adding in your eggs.
- Mix almond flour, coconut flour, sweetener, baking soda and salt.
- Then, crack eggs and mix in with butter. Add in vanilla extract and liquid sweetener.
- Combine dry and wet ingredients.
- Next, fold in strawberries. Just fold enough to swirl through batter to avoid changing the color of the batter.
- Lastly, bake for 20 minutes in preheated oven. Allow to cool completely for the best flavor and texture.
Helpful Recipe Tips
- Unlike other keto strawberry muffin recipes I cook my strawberries. This releases the true strawberry flavor. Rather than just tossing in raw strawberries were the water will leak out into the muffin making it mushy. Directions below.
- Allow muffins to cool all the way. You can eat them warm but with almond flour the texture won’t set in properly until they have cooled completely. This in turn heightens the flavor all around. Trust me!
- Icing in photos is simply powdered sweetener and heavy cream. I don’t add this to my muffins because it’s not needed. They are only iced for photo purposes. If you’d like to make an icing mix powdered sweetener with heavy cream. More sweetener than cream but if you don’t use allulose there will be an aftertaste.

Keto Strawberry Muffins
Keto strawberry muffins are better than ever at only 3g net carbs per muffin. They are low carb, grain free and even have a dairy free option. Made with a real strawberry swirl and yes, strawberries are keto friendly!
Ingredients
Dry
- 1 cup blanched almond flour
- 2 tablespoon coconut flour
- 1/4 cup granulated sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Wet
- 2 large eggs
- 4 tablespoon unsalted butter (coconut oil for dairy free)
- 1 teaspoon vanilla extract
- 1/2 teaspoon liquid monk fruit or liquid stevia
Strawberry Swirl
- 1/2 cup Strawberries (86g)
Instructions
Strawberry swirl
- Chop or blend strawberries then place in small pot on a medium heat
- Stir them often. What will happen is the water will start to cook out of the strawberries. Continuing stirring and if they start to boil too much lower the heat. Your goal is to allow the strawberries to caramelize to release their true flavor
- Continue stirring to the point where the strawberries are a rich red color and have a strong fragrance. The consistencey will be much thicker than when you started. See the recipe video below for a visual of the finished product.
Muffins
- Melt butter and preheat oven to 350°F
- Mix dry ingredients
- Mix wet ingredients with cooled melted butter
- Combine dry and wet
- Fold in strawberry swirl
- Place in muffin cups and bake for 20 minutes
- Allow to cool then serve
