The Best Keto Blueberry Muffins Ever
- Taste just like Otis Spunkmeyer muffins
- Real blueberry swirl in each muffins
- Makes 7 total muffins with multiple options
How To Make Keto Blueberry Muffins
- First, make blueberry swirl in a small pot of blueberries. No need for added water but keep the temperature under control to avoid burning.
- Begin to heat up, you’ll notice the blueberries beginning to burst or split. Add sweetener and mix. You can burst a few but don’t puree unless that’s what you prefer.
- Lastly, add in blueberry extract as a flavor enhancer. You don’t have to but I highly recommend it.
- In a bowl, combine all dry ingredients: almond flour, coconut flour, sweetener, salt and baking powder.
- Mix all wet ingredients then combine your dry and wet. Next, pour in blueberries and fold a few times. Do not mix! If you mix everything will turn the color of the blueberries. Fold only!
- Bake at 330ºF for 25 minutes then allow to cool, then serve.
Helpful Recipe Tips
- Highly recommend using the blueberry aspect for the true store-bought feel. These companies use fake ingredients alll the time so the little bit of extract will give that similar flavor we all had growing up.
- Using dairy free milk, milk, butter or any oil is an option in this recipe. They will all create a different texture but the flavor should all be very similar.
- Sweetener of choice matters how sweet the end product will be. I use a mix of monk fruit and allulose which is here but any will work they will just have a varying degree of sweetness.

These were wonderful muffins. Even non-keto family members loved how moist and flavorful they were. I’ve even substituted strawberries for the blueberries and those were delicious too.
Yum. Yum. I made this recipe this morning. Followed the recipe and they were delicious. Thank you 😋.
