How To Make Keto Pumpkin Spice Latte

  1. First, if you want to brew your own coffee do so now. I simply bought coffee out of the store to make the recipe quick and easy. After all, the coffee isn’t the star of the show here.
  2. Next, in a small sauce pan add nut milk, heavy cream or coconut cream and give that a little whisk on a medium heat.
  3. Add in granulated sweetener, canned pumpkin, pumpkin spice, vanilla extract and liquid monk fruit.

  4. Give this mix a good whisk or use the hand mixer. Make sure all the ingredients are well combined.
  5. Next, pour your coffee in the cup. If it’s cold that’s fine because the homemade creamer is super hot. Pour it into the cup.

  • Watch your heat! You want the drink to get hot in order for the ingredients to work together but not so hot you curdle the cream. A nice smoke is good but avoid an all out bubbling of your mixture.
  • Cold brew coffee, coffee concentrate or freshly brewed doesn’t matter that much. For concentrated coffee be mindful due to the caffeine but the other two stick to normal measurements. Adding more coffee will dull the sweetness if you make that adjustment.
  • Adjust sweetness to your liking. If you follow my directions this keto pumpkin spice latte will be as sweet as it is coming out of the coffee shops or Starbucks. Use the bare minimum for a light sweetness or the full measurement for maximum.

Ingredients
 

  • 1 cup unsweetened almond milk
  • 1/4 cup heavy cream (coconut cream for dairy-free option)
  • 3 tablespoon canned pumpkin
  • 3 tablespoon granulated sweetener
  • 1/2 teaspoon pumpkin spice
  • 1 teaspoon vanilla extract
  • 1/4-1/2 teaspoon liquid monk fruit (use 1/4 for hot and 1/2 for iced)
  • 1/2 cup black coffee

Instructions
 

  • If brewing your own coffee do so now. If store bought move to next step
  • In a small sauce pan add almond milk and heavy cream. Then whisk.
  • Add in canned pumpkin, vanilla extract, pumpkin spice and liquid monk fruit
  • Give a good whisk and make sure mix isn't too hot. Continue stirring about 3 minutes.
  • Pour coffee into mug.
  • Remove the creamer from heat and pour over the coffee. You may want to use a measuring cup to avoid spills
  • Top with sugar free whipped cream and serve.
