I love a good keto pancake recipe and this is the best with loaded with flavor with brown sugar and cinnamon notes in in each bite. An healthy, low carb breakfast isn’t hard to come by but a delicious recipe can be. No need for cream cheese in this one these pancakes will get the job done with butter instead, yum!
Back when I ate pancakes, the none healthy ones that is I couldn’t get enough. Drenched in butter and syrup it was a kids dream. As an adult I still crave these things but I prefer not to shoot my blood sugar through the roof in doing so. Creating a keto pancake recipe can be tricky when looking for flavor and texture. Fluffy pancakes are great but thin ones don’t bother me. I like the classic vanilla but pumpkin tickles my fancy as well.
Are Pancakes Keto
These are! But, sadly most aren’t. We are in a time where you can walk in the grocery store and pick up a frozen keto waffle, get a pancake mix and some restaurants cater to people on keto. Yet, most of these don’t receive the best reviews and some have less than ideal ingredients. A classic case of its better and cheaper to make yourself.
What Pancake Syrup Is Keto Friendly
Most sugar free pancake syrups are full of sugar or sugar free ones that use maltodextrin which is essentially sugar. As mentioned, I use Lakanto but there is Choczero and Pyrue. I have used them all and I will warn most are going to be water based and thin, with Choczero being the exception. Choczero taste great by itself but loses flavor when added to pancakes or waffles. Lakanto has the best flavor when added to the pancakes and waffles because it holds it’s flavor. But, with a stronger flavor it’s like stevia where you can’t taste it on it’s own. Yet, when mixed it’s great.
How To Make Keto Pancakes
First, I like to have my eggs at room temperature it just seems to mix better when the eggs are ice cold. Not to mention the cold egg and stiffen the butter up during mixing.
Now, combine almond flour, coconut flour, sweeteners, cinnamon and a pinch of salt. See notes below if you don’t have or choose not to use coconut flour.
You can combine these in a blender or the traditional arm muscle with a whisk which I prefer.
Then, in a medium heated pan or skillet add butter and pour pancake batter into small pancakes. See notes about heat because this is super important.
They’ll start to bubble and the edges will brown, flip then. Next, remove them and serve immediately because pancakes get cold quick.
Helpful Recipe Tips
- No coconut flour, you can make this recipe without coconut flour simply add 1-2TB almond flour in it’s place. Measurements are determined by desired thickness. The coconut flour adds more texture and thickens the batter but it can be skipped.
- Batter too thin, add more coconut flour. Just 1/4 tsp at a time because a little goes a long way. A cooks tip, the thicker the batter the fluffier the pancake will be.
- Pancakes are raw in the center, your heat is too high. Keto pancakes are sensitive because they don’t and will not cook quickly. Keep temperature on the medium/low side. Also, if butter starts to burn I have learned the heat is climbing too high to cook the pancakes in.

Keto Pancake Recipe
Equipment
- Hand mixer or blender
Ingredients
Dry Ingredients
- 2 tablespoon blanched almond flour
- 1 tablespoon Besit or Swerve Brown Sugar (I used Besti)
- 1 teaspoon coconut flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon ground cinnamon
- pinch of salt
Wet Ingredients
- 1 large egg
- 1 tablespoon butter
Instructions
- Mix together all ingredients with a whisk or pop them all into a blender and blend until smooth. Note, you can use any granulated sweetener of choice but brown sugar is what makes these special.
- Turn on skillet or pan to low/medium heat and add butter
- Pour pancakes on to skillet or pan. Make sure heat isn't too hot these aren't like normal pancakes they need more time to cook through. The lower the better but the pan/skillet should be hot enough to melt butter quickly.
- Don't make huge pancakes. The need to be small enough to get your enire spatula under the whole pancake to flip.
- Flip after you see the edges browning and light bubbling. You can also slide the spatula under the pancake and check for browning. Flip, cook and remove.
