Keto Coffee Cake
I am not a stranger to something sweet paired with my coffee on any morning. To have a keto friendly breakfast cake is a great option to have that isn’t too sweet but full of a classic flavor I love. The brown sugar streusel is a perfect compliment to coffee cake and I made sure to include a delicious one.

What is Coffee Cake

In America, we add coffee cake to our breakfast typically paired with coffee hence it’s name. Here it doesn’t have actual coffee in it but overseas that isn’t the case. Our traditional coffee cake has at least 2 layers if yellow sponge cake between a brown sugar streusel between both layers. Finally, topped off with the remaining streusel and sometimes served with a sugar icing on top.

Is Brown Sugar Keto

No, brown sugar is not keto friendly. Luckily, there are two sweeteners that replace brown sugar that are keto friendly that I use. One has a cooling aftertaste and the other doesn’t. They both resemble brown sugar in texture in flavor. The best version would be by Besti from Wholesum Yum. The second with the cooling effect is in grocery stores by Swerve but may be off putting to anyone especially people new to keto.

How To Make Keto Coffee Cake

To start, you’ll need to line a 8×8 baking dish. Put butter into microwave to melt and allow to cool. Mix almond flour, coconut flour, baking powder, sweetener for the dry mix for the sponge cake.

In a separate bowl, add eggs, liquid monk fruit and vanilla extract into the cooled butter. Next, make the brown sugar streusel by mixing brown sugar replacement, cinnamon, butter, gelatin and almond flour together.

Then, start to build your layers. Take half and layer the bottom. Then, spread the streusel through the middle. Finally, top the rest of the cake batter and spread out the best you can. Some may over lap and come to the top. I normally don’t like to use almond milk in my cake recipes but the added moisture is needed for easier spreading.

Lastly, place in preheated oven for 25-30 minutes then allow to cool when removed.

Helpful Recipe Tips

  • Sweetener matters, if any of your sweeteners contain erythritol you will experience the minty, cooling aftertaste that comes with it. I mentioned a brown sugar and a granulated sweetener that has no aftertaste that will make you think this cake taste like the real thing.
  • How to make icing, use 1/4 cup of powdered sweetener and add 1 TB of heavy cream at a time until it reaches the desired thickness. If using a sweetener with erythritol I recommend you don’t make an icing because it’ll taste just like liquid mint.
  • Is coffee cake easy to make, although delicious don’t get upset about spreading out the layers. The bottom will be easy but the top may mix with the streusel but this won’t effect the flavor at all. This recipe is made for a 8×8 baking dish. You can go smaller but I recommend nothing bigger than that.

Brown Sugar Topping

  • 2 tablespoon brown sugar substitute

Brown Sugar Streusel

  • Mix brown sugar substitute, cinnamon, almond flour and gelatin together. Gelatin is optional but it's to keep the streusal from melting into the cake like most you see
  • Melt butter then mix together well

Coffee Cake

  • Preheat oven to 350°F, melt 6 TB of butter for sponge cake and set aside for it to cool
  • Mix almond flour, coconut flour, sweetener, baking soda and salt
  • In a seprate bowl mix eggs, butter, almond milk, vanilla extract and liquid monk fruit

  • Spread half of the batter out in baking dish. Take brown sugar streusal and cover that layer. Then take the remaining batter and spread over the top the best you can, the layers may mix slightly
  • Spinkle the topping on the bake for 25-30 minutes. Allow to cool then serve.

Brown Sugar Topping

  • This is different from the struesal because its for flavor and ok to melt away a little. Mix both ingredients well then sprinkle across the top before place in the oven.
  • The look of the photos are acheived by spreading top layer as carefully as possible. Then, after cake is done add uncooked brown sugar and cinnamon sprinkle. Glazed with icing recipe used below in tips.
