Keto Blueberry Muffins

These keto blueberry muffins are the best tasting low carb muffin recipe I've made! A copycat of your favorite junk food muffin but a healthier option. Almond flour, coconut flour and vanilla take them over the top. Look and see the sweet swirl of blueberry through each muffin and dive in!

Ingredients

Keto Muffin

  • 1 cup blanched almond flour
  • 2 tablespoon coconut flour
  • 1/4 cup granulated sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 4 tablespoon unsalted butter
  • 1/2 teaspoon liquid stevia or liquid monk fruit
  • 1.5 teaspoon vanilla extract

Blueberry Swirl

  • 50 grams fresh blueberries
  • 1/2 tablespoon granulated or powdered sweetener
  • 1/4 teaspoon blueberry extract optional

Instructions

Blueberry Swirl

  • In a small sauce pot on medium heat, add bluberries. While cooking some blueberries will pop others will split. Simply smash a few or all just to creat a juice in the pot. Add sweetener and extract then mix well. Make sure they have thickened before removing. There will be a strong fragrance coming and the mix will be noticable different. All bluebrries will be soft. Let cool and it'll thicken as it cools as well. (see photos and video)

Keto Muffins

  • Preheat oven to 330°F
  • Combine blached almond flour, coconut flour, sweetener, salt and baking powder
  • Blend 2 eggs, melted butter or etc, liquid sweetener or vanilla extract
  • Mix dry and wet together
  • Carefelly fold in blueberry swirl
  • Pour in muffin liners then place in preheated oven for 25 minutes
  • Allow to cool then pour

Notes

Helpful Recipe Tips

  • Highly recommend using the blueberry aspect for the true store-bought feel. These companies use fake ingredients alll the time so the little bit of extract will give that similar flavor we all had growing up.
  • Using dairy free milk, milk, butter or any oil is an option in this recipe. They will all create a different texture but the flavor should all be very similar.
  • Sweetener of choice matters how sweet the end product will be. I use a mix of monk fruit and allulose which is here but any will work they will just have a varying degree of sweetness.
