How To Make A Keto Birthday Cake- Step By Step
- Start by mixing all your dry ingredients together evenly.
- Crack eggs and pour in cooled melted butter along with your extracts and sweetener.
- Mix the dry and wet ingredients with a hand mixer.
- Afterwards, toss in your sugar-free sprinkles by Stoka.
- Line a 9 inch round cake pan with parchment paper and spread batter evenly. It will have a thickness to it but will be easy to spread.
- Place in oven for 25-30 minutes then allow to cool.
- When making the whipped icing simply add in powdered sweetener to heavy cream then mix. Mix on a high speed until peaks are formed. For cream cheese frosting click here.

- Room temperature eggs will help because this batter already has a thickness to it. If the eggs are cold it will be thicker and harder to spread in the pan. You may even get less of a rise producing a denser cake.
- The sprinkles you use are optional. I found sugar-free sprinkles great for keto but regular sprinkles packed more flavor within the cake when I made cupcakes with them.

In this keto birthday cake you will notice that I use two sweeteners. This is to provide a real sweetness. Only using one sweetener it’s easy to get the aftertaste and use too much in order to get a real sweetness. Granulated sweetener assist in the bulking of the cake but provides very little sweetness. In order to correct this a concentrated liquid sweetener is used as well. For those that don’t like stevia using monk fruit is a perfect alternative. Yet, the sweetener must be concentrated.

Cake
- 1.5 cup blanched almond flour
- 3 tablespoon coconut flour
- 1/4 cup granulated sweetener
- 1 teaspoon baking powder
- 3 large eggs
- 4 tablespoon salted butter
- 1/2 teaspoon butter extract or vanilla extract
- 1/2 teaspoon liquid stevia or liquid monk fruit
- 2-3 tablespoon Stoka sprinkles
Whipped Frosting
- 1/2 cup heavy cream
- 2 tablespoon powdered sweetener
- 1/4 teaspoon vanilla extract
Instructions
Cake
- Preheat oven to 330°F
- Mix almond flour, coconut flour, granulated sweetener and baking powder
- Beat eggs, melted butter and liquid sweetener
- Combine dry and wet then fold in sprinkles and place in round cake pan lined with parchment paper.
- Place in preheated oven for 25-30 minutes then allow to cool.
Whipped icing
- Using hand mixer on an high speed beat cold heavy cream to stiff peaks then serve
- Add powdered sweetener and extract into cold heavy cream before beating
