Ingredients
 

Carrot Cake

    Dry Ingredients

    • 1 3/4 cup blanched almond flour
    • 3 tablespoon coconut flour
    • 1/4 cup granulated sweetener
    • 1/4 cup swerve brown sugar alternative
    • 1/8 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground nutmeg
    • 1 teaspoon baking soda

    Wet Ingredients

    • 3 large eggs
    • 6 tablespoon melted butter
    • 1 tablespoon vanilla extract
    • 1 tablespoon blackstrap molassas or sugar free maple syrup
    • 1 teaspoon liquid stevia or liquid monk fruit (optional for added sweetness)
    • 1 tablespoon vingar or lemon juice

    Mix ins

    • 1 cup freshly grated carrots (110g)
    • 1/4 cup chopped walnuts or pecans

    Cream Cheese Frosting

    • 4 ounces cream cheese
    • 1 tablespoon sour cream
    • 2 tablespoon powdered sweetener
    • 1/2 teaspoon vanilla extract

    Instructions
     

    Carrot Cake

    • Preheat oven to 350°F
    • Grate carrots if using them. If you choose to buy pre-shredded that is fine
    • Combine all dry ingredients in a mixing bowl
    • In a separate bowl combine all wet ingredients
    • mix the dry and wet ingredients and scraping the sides of the bowl to make sure everything is combined
    • If using carrots or nuts fold them in here
    • Place in preheated oven for 30-35 minutes or until you can stick a toothpick in and it comes out clean

    Cream Cheese Frosting

    • Cream sour cream and cream cheese together
    • Next mix in powdered sweetener. Then mix until smooth
    • Add in extract here and enjoy

      This is my favorite keto pastry recipe so far. I’ve been on keto for 5 weeks. I actually made these to be muffins in the morning. They paired excellently with coffee or tea. My husband loved them, though they met with mixed reviews from my children. My two year old loved them while my five year old didn’t, but she’s going through a strangely picky phase right now. We did use real molasses. The flavor of these muffins is deep and rich and sooo much like “real” carrot cake. I was surprised! Thanks for the recipe.
