Ingredients

Cake

  • 1.5 cup blanched almond flour
  • 3 tablespoon coconut flour
  • 1/4 cup granulated sweetener
  • 1 teaspoon baking powder
  • 3 large eggs
  • 4 tablespoon salted butter
  • 1/2 teaspoon butter extract or vanilla extract
  • 1/2 teaspoon liquid stevia or liquid monk fruit
  • 2-3 tablespoon Stoka sprinkles

Whipped Frosting

  • 1/2 cup heavy cream
  • 2 tablespoon powdered sweetener
  • 1/4 teaspoon vanilla extract

Instructions

Cake

  • Preheat oven to 330°F
  • Mix almond flour, coconut flour, granulated sweetener and baking powder
  • Beat eggs, melted butter and liquid sweetener
  • Combine dry and wet then fold in sprinkles and place in round cake pan lined with parchment paper.
  • Place in preheated oven for 25-30 minutes then allow to cool.

Whipped icing

  • Using hand mixer on an high speed beat cold heavy cream to stiff peaks then serve
  • Add powdered sweetener and extract into cold heavy cream before beating

Notes

Helpful Recipe Tips

  • Room temperature eggs will help because this batter already has a thickness to it. If the eggs are cold it will be thicker and harder to spread in the pan. You may even get less of a rise producing a denser cake.
  • The sprinkles you use are optional. I found sugar-free sprinkles great for keto but regular sprinkles packed more flavor within the cake when I made cupcakes with them.
