Cucumber avocado salad is a mix between fresh, crisp cucumbers and creamy bites of ripe avocado. It’s the perfect summer salad for cookouts and easy to make.

Quick tips before starting
- You have to prep the cucumbers before starting. You will need to salt them heavy then let them sit. This will draw out the excess water so many people complain that destroys their cucumber salads.
- In the photos I halved the cucumbers. However, I suggest dicing the cucumbers for the actual recipe. This will allow easy mixing and eating. Skin or no skin is a matter of personal preference.
Storing the recipe
This is not a recipe to be frozen. In the refrigerator, this recipe will last 2-3 days depending on the freshness of the ingredients. Due to the ingredients like avocado the salad is really fresh and doesn’t last long. The acid wills help but they will also breakdown the ingredients quickly.

How to keep avocado from turning brown?
When doing the prep for the cucumbers, in a bowl of water add lemon juice or buy an extra lime or two. You are doing this because you are adding citric acid to the water from the juices. Citric acid is a natural preservative found in a ton of foods in the grocery store. But, it also slows down the oxidation of the avocado. Oxidation is why avocados turn brown. Chop the avocado up then place in a bowl of water and citrus juice while the cucumbers are prepping. To add, the lime juice in the dressing will also help with this.

Cucumber Avocado Salad
Ingredients
- 2 large cucumber
- 1 avocado (cubed)
- 1/2 medium red onion (sliced)
- salt & pepper to taste
Dressing
- 1/4 cup olive oil
- 2 lime ( juiced)
- 2 tablespoon white wine vinegar
- 1/2 cup cilantro (chopped)
Instructions
- To start, I suggest you dice the cucumbers in small quarter pieces. This means slice once the long way then slice again until you have 4 long slivers of cucumber. Then, slice the cucumber the short way and you have a bunch of quarter pieces for the salad.
- Next, heavily salt the cucumbers in a large bowl then cover and place in the refrigerator for an hour. Also slice the red onion and place in a bowl of warm water. After the hour is up drain the excess water and rinse the cucumbers to remove all that excess salt. Lightly, pat dry the cucumbers. Drain and lightly pat dry the onions as well.
- In a small bowl, which together all the ingredients to the citrus vinaigrette.
- Then, add the cucumbers to a large bowl or salad bowl. Next, dice an whole avocado and toss in along with the onions. Pour dressing over salad and give everything n good mix.
- Lastly, salt and pepper to taste and serve immediately.
