Cucumber avocado salad is a mix between fresh, crisp cucumbers and creamy bites of ripe avocado. It's the perfect summer salad for cookouts and easy to make.
To start, I suggest you dice the cucumbers in small quarter pieces. This means slice once the long way then slice again until you have 4 long slivers of cucumber. Then, slice the cucumber the short way and you have a bunch of quarter pieces for the salad.
Next, heavily salt the cucumbers in a large bowl then cover and place in the refrigerator for an hour. Also slice the red onion and place in a bowl of warm water. After the hour is up drain the excess water and rinse the cucumbers to remove all that excess salt. Lightly, pat dry the cucumbers. Drain and lightly pat dry the onions as well.
In a small bowl, which together all the ingredients to the citrus vinaigrette.
Then, add the cucumbers to a large bowl or salad bowl. Next, dice an whole avocado and toss in along with the onions. Pour dressing over salad and give everything n good mix.
Lastly, salt and pepper to taste and serve immediately.
