How To Make Crockpot Stuffed Pepper Soup
Ingredients needed
- Ground beef
- Onion
- Red bell pepper
- Green bell pepper
- Diced tomatoes
- Tomato sauce
- Beef broth
- Cooked rice (see notes)
- Chicken boullion cube
Helpful tips for the best recipe
- Can I cook the rice in the crockpot? I do not recommend doing this. I have tested recipes with rice and noodles in the crockpot and it’s not worth the extra work needed. Top add, the end product isn’t as good. Rice requires a high heat to cook properly and the crockpot isn’t designed to do that efficiently.
- You can swap the beef broth for chicken if you’d like less of that big beef flavor.
Making the stuffed pepper soup in the crockpot
- First, you’ll need to brown the ground beef in a pan. While browning the beef, chop up all the veggies.
- Now, when the meat is finished pour all the meat minus the drippings into the crockpot. Add in the chopped veggies, diced tomato, broth and a crumbled chicken bouillon cube.
- Turn the crockpot on high for 4 hours or low for 6 hours. About 1 hour before the crockpot is finished cooking make the rice. Make the rice according to the package instructions but before adding in the rice crumble a bouillon cube in for extra flavor. When the rice is done cooking add the cooked hot rice directly into the soup. Allow the rice to absorb the soups flavors for the last 30 minutes of the crockpot cook time.
- When the crockpot is finished serve the soup with a shredded cheese on top for that classic stuffed pepper feel and enjoy. Caution, soup will be very hot.
