Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 15 ounce can of petite diced tomatoes, drained & rinsed
  • 15 ounce can of tomato sauce
  • 4 cup beef broth
  • 1 cup rice, cooked
  • 2 chicken bouillon cube
  • shredded cheese for topping (optional)

Instructions

  • First, you'll need to brown the ground beef in a pan. While browning the beef, chop up all the veggies.
  • Now, when the meat is finished pour all the meat minus the drippings into the crockpot. Add in the chopped veggies, diced tomato, broth and a crumbled chicken bouillon cube.
  • Turn the crockpot on high for 4 hours or low for 6 hours. About 1 hour before the crockpot is finished cooking make the rice. Make the rice according to the package instructions but before adding in the rice crumble a bouillon cube in for extra flavor. When the rice is done cooking add the cooked hot rice directly into the soup. Allow the rice to absorb the soups flavors for the last 30 minutes of the crockpot cook time.
  • When the crockpot is finished serve the soup with a shredded cheese on top for that classic stuffed pepper feel and enjoy. Caution, soup will be very hot.
