Helpful tips to avoid mistakes before starting

  • Noodles are absorbent. This means that as you allow the spaghetti to sit in the crockpot it will absorb all the moisture from the cheese. I suggest serving as quick as possible and if you need to use less spaghetti. For example, if your making this ahead of time and serving later, add the spaghetti before serving or use less to spare some of the moisture from the recipe.
  • Quick tip to shorten time, use already cooked chicken or rotisserie chicken shredded. The majority of the cook time is to cook the chicken so you can shorten this.

Tips for leftovers

This recipe will keep in an airtight container for about 4 days. But, I recommend you do not freeze the leftovers in this recipe due to the diary. The dairy will separate* when it thaws because the emulsions are broken.

Ingredients
 

  • 1-1.5 pound boneless, skinless chicken breast
  • 2 10 oz cream of chicken
  • 1 can of Rotel tomatoes and green chilis, drained & rinsed
  • 2 tablespoon Italian seasoning
  • 2 cup chicken broth
  • 16 ounce spaghetti noodles (dry)
  • 4 ounce cream cheese
  • 2 cup sharp cheddar cheese (shredded)
  • 1 tablespoon apple cider vinegar
  • salt & black pepper to taste

Instructions
 

  • In the crockpot, add in the cans of cream of chicken, Rotel tomatoes and chilies, chicken broth, Italian seasoning and lightly salt and pepper.
  • Now, right in the middle add the whole chicken breast. Place the crockpot on high and you'll cook the chicken about 3 hours for it to be tender enough to shred. On low it may take 6-7 hours.
  • After 3 hours, remove the chicken and shred it. Place the chicken back into the crockpot. Now, cook the spaghetti noodles in a pot on your stove according to the directions on the package.
  • Next, add the cooked noodles into the crockpot along with the cream cheese and shredded cheese. Lightly season with salt and black pepper then pour apple cider vinegar in. Give everything a mix then place the crockpot on warm for 30 minutes. The ingredients are hot enough to melt all cheese down. If extra time is needed add when necessary.
  • Serve, after all the cheese has melted and everything is creamy and smooth. Taste for salt before serving, I have to add extra at the end always.
