Normally in a pot, rice is sit and forget it. That will not work in the crockpot. You have to stir it for it to cook even and you can’t let it sit for too long.

Adding the rice in the beginning is a mistake because it will sit, cook and get mushy. Adding the rice is the last thing you should do and I am going to put that in the directions below.

  1. First, you need to cook the chicken in the crockpot. Add the raw chicken breast, cream of chicken, diced onion, chicken broth, cheddar cheese soup into the crockpot and cook on high for 3 hours. This is a recipe you have to cook on high because of the rice.
  2. After that time, remove the chicken. Shred it and chop it up then place it back in the crockpot.
  3. Now, add the broccoli florets and the rice into the crockpot. Give it a good stir.
  4. Then, after 20 minutes comeback and stir it again. Repeat 20 minutes after that. At the one hour mark the rice should be done and you can turn off the crockpot. Remember, rice cooks in 20 minutes on the stove. If you leave it in there longer than 1 hour it will start getting mushy, I’ve tested it.
  5. Season to taste with salt and black pepper then serve.

    The rice has been in the crockpot for 90 minutes and is still hard. The rest is a soupy mess. horrible recipe.

  2. I apologize you’re having a hard time is your crockpot on the high or low setting? I advised in the instructions that the crockpot must be on a high setting and functioning properly or the rice will not cook correctly in the crockpot.
