I used my broccoli cheddar soup and steak potato soup to inspire me to make this recipe.

This creamy turkey soup has a great, lean source of protein with broccoli and carrots. The creamy soup brings all the flavors together.

It’s easy to make. You can expect it to take you about 30 minutes from start to finish.

How To Make Creamy Turkey Soup

Ingredients needed

  • Leftover turkey
  • Carrots
  • Broccoli
  • Heavy cream
  • Onion
  • Garlic
  • All-purpose flour

Quick tips before starting the recipe.

  • I used frozen veggies for ease but feel free to use fresh. This will not change the recipe up at all.
  • You can make this soup cheesy if you add in 8 ounces of your favorite cheese freshly grated.

Making the creamy turkey soup recipe

  1. To start, dice the onion and mince the garlic.
  2. In a large pot on medium heat add a little oil then toss in the onions and garlic. Cook these until they are both fragrant and you start to see little brown bits in the pan.
  3. Now, add in the flour and mix it in with the onions and garlic. Add a splash of chicken broth when the pan gets dry to help you cook the raw flavor from the flour.
  4. Next, add in the frozen veggies and turkey. Then, pour in the rest of the chicken broth. Bring the pot to a simmer and cook for about 8 minutes to soften the frozen veggies.
  5. Once the veggies are done remove the pot from the heat and add in the heavy cream. Lastly, season with salt and pepper to your personal taste.

Ingredients
 

  • 1 pound leftover turkey, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 8 ounces frozen carrots
  • 8 ounces frozen broccoli cuts
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • salt & black pepper to taste
