Creamy Turkey Soup

Ingredients
 

  • 1 pound leftover turkey, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 8 ounces frozen carrots
  • 8 ounces frozen broccoli cuts
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • salt & black pepper to taste

Instructions
 

  • To start, dice the onion and mince the garlic.
  • In a large pot on medium heat add a little oil then toss in the onions and garlic. Cook these until they are both fragrant and you start to see little brown bits in the pan.
  • Now, add in the flour and mix it in with the onions and garlic. Add a splash of chicken broth when the pan gets dry to help you cook the raw flavor from the flour.
  • Next, add in the frozen veggies and turkey. Then, pour in the rest of the chicken broth. Bring the pot to a simmer and cook for about 8 minutes to soften the frozen veggies.
  • Once the veggies are done remove the pot from the heat and add in the heavy cream. Lastly, season with salt and pepper to your personal taste.
