  • Because you’ll need to make a roux, pay attention to the heat. You’ll be searing the meatballs first then needing to lower the heat to introduce the flour to the pan. For beginners, this can be a little tricky. To test how hot the pan is, add a little butter and not the whole two tablespoons first. If it immediately melt and brown the pan is too hot. You want it to melt then keep that yellow tint as it starts to bubble then you add in the flour.
  • Chicken broth is great if you have it on hand. But, I’ve made delicious recipes by just using water when I’m cutting cost and making recipes on a budget.

  4. Now, add in the soy sauce and lime juice. Reduce the heat to low then add in the meatballs. Allow them to cook all the way through.
  5. When the meatballs are cooked through, turn off the heat then garnish with cilantro and serve.

Ingredients
 

Chicken Meatballs

  • 16 ounce ground chicken
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/2 cup grated parmesan
  • 2 tablespoon vegetable oil (or any cooking oil)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce

  • 2 tablespoon butter
  • 2 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 juiced lime (use zest for garnishing)
  • 1/4 cup cilantro (chopped)

Instructions
 

  • In a bowl, combine all the ingredients for the chicken meatballs. The allow the mix to sit for 10-15 minutes so that the meatballs form better. After that, roll the meatballs by hand.
  • In a pan on medium high heat, add a little oil for cooking then sear the meatballs. Just sear them then remove them from the pan. They'll finish cooking later.
  • Once all the meatballs are seared, add in the butter. Once the butter is melted, add in the flour and start to whisk. Cook the flour about 30-60 seconds.
  • Now, pour in the chicken broth then the coconut milk while stirring. Add in the lime juice and soy sauce and continue stirring until the sauce starts to thicken. Once thickened, lower the heat to low and add the meatballs back in.
  • Cover the pan and allow the meatballs to cook until cooked through the middle, this will take about 10 minutes depending on the size of the meatballs.
  • Once they are cooked through, turn off the heat then garnish with lime zest and the stir in the chopped cilantro in the sauce. Serve and enjoy!
