- Heavy cream or buttermilk are my go-to ingredients for the best mashed potatoes. Milk, even whole milk lacks flavor for these types of recipes. If calories are an issue I say use buttermilk but if you want full on flavor pour the heavy cream in. The measurements are the same but in the recipe below I will be using heavy cream.
- A fresh herb is great with potatoes. Any of your favorite herb with do but I am a big fan of rosemary for this recipe. You can also opt of chives or parsley.
Making these red skin mashed potatoes easily, easy steps
- First, bring a large pot of water to a boil. Carefully place the washed red potatoes in and cover for 20 minutes or until a butter knife easily slides into the potatoes.
- Now, while the potatoes are cooking take the heavy cream and butter and add it to the stove top on a low heat. There should be no steam. Simply a gentle heat to melt the butter over time and warm up the heavy cream.
- When the red potatoes are done cooking drain them. Next, place in a large bowl. Using a potato masher, mash them just a little.
- Then, add in the melted butter and heavy cream. Continue mashing the potatoes until the majority of the cream and butter are absorbed.
- Lastly, fold in the herbs along with salt and pepper to taste.
