Ingredients needed

  • Black eyed peas
  • Cubed ham
  • Onion
  • Celery
  • Garlic
  • Chicken broth
  • Collard greens
  • Tomato paste
  • Tomato sauce
  • Worcestershire sauce
  • Chicken boullion cube

Tips for the recipe

  • Making fresh black eyed peas instead of using canned. All you need to do is soak the beans in water for 2-3 hours covered. Rinse the beans then start the recipe as written below.
  • Any green, leafy vegetable can work such as kale or turnips. Collard greens do tend to have a much stronger flavor than the others.
  • Adding more meat like ham hock, bacon or another salty meat can enhance the overall flavor. If adding more salty meats you may want to leave out the chicken bouillon cube.

Making the black eyed pea soup

  1. First, prep all of the ingredients.
  2. Then, in a pot on medium high heat add a little oil then toss in the diced onion, celery and minced garlic. Cook until these are soft and fragrant. Then, toss in the cubed ham.
  3. Now, cook for about 2 minutes then add in the tomato paste. Cook the paste by mixing it into the other ingredients for about 30-60 seconds.
  4. Next, pour in the tomato sauce then the broth. Toss in a chicken bouillon cube and add the chopped collard green right on top.
  5. Then, using a spoon mix the raw collard greens in the best you can. Lower the heat to medium then cover and allow the black eyed pea soup to cook 15-20 minutes. When the collards are ready they will be soft with a darker green color.
  6. Before serving, add in Worcestershire sauce and season with salt and pepper to taste.

  • 1 medium yellow onion, diced
  • 2 rib celery, roughly chopped
  • 5 cloves garlic, minced
  • 1 bunch collard greens, stem removed & chopped
  • 15 ounce can of tomato sauce
  • 3 ounce tomato paste
  • 4 cups chicken broth
  • 1 cube chicken bouillon
  • 2 tablespoon worcestershire sauce
  • salt & pepper to taste
