  • Jalapeño
  • Red onion
  • Cucumber
  • Cherry tomatoes
  • Celery
  • Corn

  • Dressing (ingredients listed below)

Helpful tips before starting

  • Salads with homemade dressings are known to become watery. To help with this prep the cucumber the way I did in my cucumber feta salad recipe. The vinegar and salt causes the veggies to release their water so doing this before making the salad makes a big difference.
  • To add to the previous tip, do not add the dressing until you’re ready to serve. This can also help. However, if there are leftovers the water will start to release overtime. You could make the salad ahead of time and add the dressing later.

Making the black eyed pea salad recipe

  1. First, the majority of the prep time is dicing the ingredients needed for the salad. Remove the stem and seeds from the jalapeño before dicing unless you like the added heat. Drain and rinse the black eyed peas, dice the onion, halve the tomatoes, cumbers and mince the celery.
  2. In a small bowl or cup mix together all the ingredients for the salad dressing.
  3. Toss all the prepped ingredients together. Then, add in the dressing you just mixed together. Serve.

  • 2 15 ounce can of black eyed peas, drained & rinsed
  • 1 medium jalapeño, minced
  • 1/2 medium red onion, diced
  • 1 medium cucumber, diced
  • 1 rib celery, minced
  • 1 pint cherry tomatoes, halved
  • 15 ounce can of corn, drained & rinsed
  • 1/2 cup parsley

Dressing

  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1 lemon, squeezed
  • 2 teaspoon salt
  • 1 teaspoon black pepper

Instructions
