We all love cucumber and watermelon salads during the summer. Why not?

They are refreshing and sweet. But, this cucumber feta salad changes everything for me. And I have quite a few cucumber salads might I add.

The ease of this recipe and how well the flavors work with the dressing is incredible.

Crisp cucumber with herbs in a lemon vinaigrette dressing is perfect for a hot summer day.

How To Make Cucumber Feta Salad

Check off the ingredients in the salad first

  • Cucumber
  • Feta cheese
  • Thyme
  • Basil
  • Lemon
  • Olive oil
  • Apple cider vinegar
  • Salt & black pepper

A few tips to make note of before starting

  • Some people like to make additions. One add in I would recommend is making this a cucumber tomato salad. Add in some sweet cherry tomatoes to push the flavors a little higher.
  • Prep the cucumbers before serving. This can be a pain but you will be thankful because all that excess water won’t destroy your salad as it sits. Below I added steps for this so don’t skip them.
  • In the photos the cucumbers are sliced in circles. I recommend you dice the cucumbers like in the recipe video. This makes the bite sized pieces work with the feta cheese much better. There are slices in the photo because they look better in pictures, yes I am guilty.

Putting everything together for the recipe

  1. First, remove the skin the dice cucumbers into small quarters as in the video. Next, salt them heavy, cover then refrigerate for 1 hour. When the hour is up, drain and rinse off the excess salt. Then, lightly pat dry them and add them back into a large bowl.
  2. While the cucumbers are getting ready make the dressing. Chop up basil and remove thyme from the stems. In a small bowl add in oil, squeezed lemon, apple cider vinegar, herbs with salt and black pepper. Mix well.
  3. Now, when the cucumbers are ready add in the feta cheese then pour the dressing on top. Mix everything well and taste for salt. You shouldn’t need to add more, please taste before adding.
  4. Garnish with freshly cracked black pepper then serve.

What to do with leftovers

Storing cucumber feta salad is simple but do not freeze this recipe. The cucumbers should keep about 2 days but is best the first day.

Ingredients
 

  • 2 cucumber, peeled & diced
  • 1 cup feta cheese, crumbled

Dressing

  • 1/4 cup olive oil
  • 1 lemon, squeezed
  • 1 teaspoon apple cider vinegar
  • 4 sprig thyme
  • 1/4 cup basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

    Great recipe. Thanks! I can’t wait to enjoy it with some grilled fish or other seafood. It would be a perfect compliment. Next time, I’d like to try the slices as you show in the beauty shot. I have a feeling I may enjoy that cut even better as long as I go much lighter on the initial salting.

  3. The amount of salt in the beginning can go up or down. The salt is washed off anyways. The main thing it’s for is to draw the water out of the cucumbers. Thank you so much for trying and reviewing the recipe your time is greatly appreciated.
