Ingredients
 

  • 2 15 ounce can of black eyed peas, drained & rinsed
  • 1 medium jalapeño, minced
  • 1/2 medium red onion, diced
  • 1 medium cucumber, diced
  • 1 rib celery, minced
  • 1 pint cherry tomatoes, halved
  • 15 ounce can of corn, drained & rinsed
  • 1/2 cup parsley

Dressing

  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1 lemon, squeezed
  • 2 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • First, the majority of the prep time is dicing the ingredients needed for the salad. Remove the stem and seeds from the jalapeño before dicing unless you like the added heat. Drain and rinse the black eyed peas, dice the onion, halve the tomatoes, cumbers and mince the celery.
  • In a small bowl or cup mix together all the ingredients for the salad dressing.
  • Toss all the prepped ingredients together. Then, add in the dressing you just mixed together. Serve.
