According to the USDA*, the proper temperature for pork should at least reach 145F before it is safe to eat. There is still some red at that temp but at 165F the meat will be brown all the way through. With the high fat content in sausage you can push it pretty hard and it not be dry.
Thickness does matter, if patties are thin you may want to lower the temperature to avoid drying them out. If they are thicker than 1/4 inch you will need to add time for them to properly cook.

- Sausage Patties (frozen or fresh)
Instructions
- First, preheat the air fryer to 400F.
- Then remove the sausage patties from the package and place in the preheated air fryer.
- For fresh, cook 4 minutes each side or 6 minutes each side for patties 1/4 inch thick and thicker.
- For frozen, air fry frozen sausage patties for 6 minutes each side. The sausage patties I tested when cooking from frozen all were done under 15 minutes. This will vary on the power of your air fryer.
- When sausage patties in the air fryer are done allow them to cool a bit because the insides are very hot. Serve.
