How To Make Sweet Potato Shepherd’s Pie
Ingredients needed
- Sweet potatoes
- Ground beef
- Onion
- Garlic
- Tomato paste
- Beef broth
- Worcestershire sauce
- Frozen peas & carrots
- Butter
Quick tip before you start cooking the recipe
Sweet potato shepherd’s pie is different due to the lack of starch in the potatoes. The sweet potatoes do have a different texture than starchy, russet potatoes. The recipe should not be sloppy or runny but the extra thickness isn’t due to the lack of parmesan cheese in the potato. However, the recipe is still delicious with a notable good change in flavor with using the sweet potato.
Making the sweet potato shepherd’s pie recipe
- First, peel and largely chop up sweet potatoes. Now, in a large pot of boiling water add the potatoes then cover for about 20 minutes. While the potatoes are cooking, prep the other ingredients.
- Preheat oven to 375F.
- In a pot on medium heat add a little oil then brown the ground beef. For this recipe lightly season as you go. Once the ground beef is cooked remove then add in the onions, garlic with the peas and carrots.
- Cook until the onion and garlic are fragrant and browning. Then, toss back in the ground beef. Now, add in the tomato paste and cook with the other ingredients by mixing it with everything in the pot.
- Add in the beef broth and Worcestershire sauce. The tomato paste will thicken everything very nicely when you add in the broth. Then, transfer the filling to a baking dish and pat down evenly.
- Now, add the soft sweet potatoes to a bowl then with a hand mixer beat them smooth with butter. Taste for salt and pepper. After the seasoning is correct, add them on top of the cooked ground beef and carefully spread across the top of the baking dish.
- Place in the preheated oven uncovered for 30 minutes. The ingredients are all cooked so there won’t be much of a change visually.
- Allow to cool then serve and enjoy.
