Sweet potato shepherd's pie is a twist to classic recipe. Topping your casserole with the nattily sweet, buttery flavors of sweet potato in this easy dish.
First, peel and largely chop up sweet potatoes. Now, in a large pot of boiling water add the potatoes then cover for about 20 minutes. While the potatoes are cooking, prep the other ingredients.
Preheat oven to 375℉.
In a pot on medium heat add a little oil then brown the ground beef. For this recipe lightly season as you go. Once the ground beef is cooked remove then add in the onions, garlic with the peas and carrots.
Cook until the onion and garlic are fragrant and browning. Then, toss back in the ground beef. Now, add in the tomato paste and cook with the other ingredients by mixing it with everything in the pot.
Add in the beef broth and Worcestershire sauce. The tomato paste will thicken everything very nicely when you add in the broth. Then, transfer the filling to a baking dish and pat down evenly.
Now, add the soft sweet potatoes to a bowl then with a hand mixer beat them smooth with butter. Taste for salt and pepper. After the seasoning is correct, add them on top of the cooked ground beef and carefully spread across the top of the baking dish.
Place in the preheated oven uncovered for 30 minutes. The ingredients are all cooked so there won’t be much of a change visually.
Allow to cool then serve and enjoy.
