You’ll need a few ingredients to start

  • Smoked sausage (your favorite sausage such as beef kielbasa or polish)
  • Yukon potatoes
  • Red onion
  • Oil (olive oil, vegetable oil, etc.)
  • Italian seasoning
  • Garlic powder
  • Smoked paprika
  • Salt & black pepper

Quick tips before starting

  • When slicing the veggies, you will want to slice the onions thick. This will allow them to hold up better while the potatoes cook. Depending on the size of your sheet pan you may be able to fit 2 onions instead of 1 that is listed.
  • Slice the potatoes then but not potato chip then. You can overlap them a bit as well. Red potatoes or russet potatoes will work as well if that’ what you have available. But, Yukon gold work the best for the recipe with flavor and texture.

  1. First, prep all the ingredients. You do not have to slice the sausage. You can lay the full link on the sheet pan if you’d like. But you do need to slice the onion thick and the potatoes thin.
  2. In a small bowl combine the seasoning together.
  3. Now, in a large bowl add the onions and potatoes. Pour oil on top and then cover with the seasoning. Toss everything together then place on the sheet pan.
  4. Bake for 40 minutes or until you can easily pierce the potatoes. This is why I recommend you slice them thin for a faster cook time.
  5. Lastly, allow to cool a bit then serve. The inside of the potatoes will be hot.
