Roasted grape tomatoes are bursted bites of sweet tomatoes with roasted garlic. A sweet topping or treat that is healthy for you as well.

I wasn’t finished when I made my cherry tomato sauce.

At the end of the summer all the gardeners are looking for things to do with their fresh produce. And I have the fix.

Some veggies when roasted release a natural sweetness. This is why we love caramelized onions so much. Tomatoes are already sweet but roasting them takes it to another level.

Adding garlic, salt and fresh olive oil can turn these into a great side dish for a meal, snack or a topping with your toast or sandwich.

All you need is fresh tomatoes, few ingredients and 20 minutes in the oven.

How To Make Roasted Grape Tomatoes

Ingredients needed

  • Grape tomatoes
  • Olive oil
  • Garlic
  • Coarse salt & pepper

Making the roasted grape tomatoes with garlic

  1. First, preheat your oven to 400F.
  2. Next, slice the grape tomatoes inhale and roughly chop the garlic cloves. Avoid mincing the garlic because the smaller the pieces the more likely they will burn.
  3. In a bowl, toss the tomatoes and garlic in salt, pepper and oil. Then, lay them all out on a sheet pan. If the sheet pan is large enough be sure to have all the tomato halves facing cut side down.
  4. Bake for 20 minutes then serve.

Ingredients

  • 2 pints grape tomatoes, halved
  • 4-5 cloves garlic, roughly chopped
  • 1 tablespoon coarse salt if using fine grain do not use the same measurements, lower by half
  • 1 tablespoon coarse pepper if using fine grain do not use the same measurements, lower by half
  • 1 tablespoon olive oil

Instructions

  • First, preheat your oven to 400℉
