Let me say I love pumpkin spice!

I haven’t came around to apple yet but pumpkin is a winner in my book. Pumpkin Halo Top, pumpkin spice Oreo’s, pumpkin spice fudge strips and pumpkin spice latte’s!

Yes, in case you were wondering I have a problem. Yet, I haven’t had anything pumpkin spice on keto. But, today all that changes. Because I created my very own pumpkin spice keto pancakes. Did I mention the cream cheese icing?

Now, I said I would hold off on the sweets for a while. In all honesty I wouldn’t call these a sweet. There is sweetener inside the cream cheese of course. Due to the spices in the low carb pancakes the sweetness is dumbed down. What you are left with is tangy cream cheese and pumpkin spice flavoring.

These would be perfect for a keto breakfast recipe during a late September morning.

Pumpkin Spice Keto Pancakes

Let’s talk texture!

Due to the dryness of the coconut flour the pumpkin puree does wonders. What you’re left with is a very moist low carb pancake. See in gluten free flours this isn’t common. Especially when cooking with coconut flour. The more moisture the better.

Surprisingly they don’t give off a huge pumpkin spice fragrance. I was a little disappointed at first. But when the taste was there I became uplifted quickly.

In a previous low carb pancake recipe I used cinnamon as well. So my goal was to not taste anything like those or have a similar spice as in my fat bombs.

But, when these moist pancakes hit my palate they were in a league of their own. A pumpkin spice league of course. No ginger or cinnamon roll flavor at all. I had succeeded!

The cream cheese brought so much balance. Feel free to add a sugar free maple syrup if you’d like. Making this recipe dairy free if using the unsweetened almond milk. But, I think cream cheese and pumpkin spices flavor profiles are a better fit. Not too sweet, yet absolutely full of flavor.

Ingredients
 

pumpkin pie pancakes

  • 2 tablespoon Coconut flour
  • 1 tablespoon granulated sweetener
  • 1/4 teaspoon Baking Powder
  • 1/2 teaspoon pumpkin spice
  • 1 tablespoon pumpkin puree
  • 2 large Eggs
  • 1/2 teaspoon Vanilla extract
  • pecans optional

cream cheese icing

  • 1 ounces Cream Cheese
  • 1/2 tablespoon Sour Cream
  • 1 tablespoon powedered sweetener

Instructions

  • For dry combine coconut flour, baking powder, and pumpkin spice. Mix thoroughly
  • For wet pumpkin puree, eggs, vanilla extract
  • combine dry and wet
  • On medium heat on skillet or saute pan add batter. Depending on size you have enough for 3 pancakes
  • Pancakes won't get bubbly on top so pay attention to edges then flip after you lift up and notice your desired browning

cream cheese icing

  • bring cream cheese to room temperature for easy mixing
  • mix cream cheese, sour cream and powdered sweetener. That's it!
