Ingredient tips
- Pistachio butter: This is the most expensive ingredient but for good reason. The nuts themselves don’t bring that true pistachio flavor through the entire rice krispie treat. Due to cost, this is also the reason there is no tahini or kadayif added to keep the overall cost down for the average person.
- Chocolate: You may be intrigued to add more chocolate but I recommend you do not to keep the flavors balanced. In the recipe, I used semi-sweet chocolate because the marshmallows are sweet enough. However, milk chocolate is a great option but white chocolate chips will make the pistachio rice krispie treats very sweet.
- Butter: If you have it on hand, use salted butter. It makes a difference in the end result and the flavor is super nice. If you do not have salted butter, use what you have on had.
- Marshmallows: The rice krispie treats use mini marshmallows. The normal bag is 10 ounces do you’ll need one and a half bags. The first bag is for the treats themselves. The extra 5 ounces is mixed in to add an extra gooey bite with the pistachio rice krispie treats.
Important prep tips
- Medium to low heat at all times. You don’t want to burn the butter or the marshmallows when making the recipe. Take your time, don’t try to rush the recipe.
- This is a sticky recipe. Line the pan with parchment paper ahead of time and make sure you use a non-stick pot.
- Do not refrigerate to speed up the process! This makes super hard rice krispie treats. Let them cool on their own on the counter top. They stay gooey and soft.
- Don’t overpack them in the pan. Lightly press them down in the pan to maintain that gooey, pull-apart texture of the best rice krispie treats. If you push the mixture down and pack it hard, the treats will come out super stiff and tight.

- 9×9 baking pan
Ingredients
- 8 tablespoon salted butter
- 10 ounce marshmallow (mini)
- 1/4 cup pistachio butter
- 6 cup Rice Krispie cereal
- 1 cup pistachios (chopped)
- 5 ounce marshmallow (mini)
- 1/2 cup chocolate chips
Instructions
- Line the pan with parchment paper before starting.
- In a non-stick pot on medium-low heat, add the butter. Once the butter melts and starts to brown slightly, add in the marshmallows and pistachio butter. Mix the butter, pistachio butter and marshmallows well until they are completely combined before adding in any other ingredient.
- Once combined turn off the heat, add in the Rice Krispie cereal and chopped pistachios. When almost mixed in with the marshmallows, add in the extra marshmallows and the chocolate chips. At this point it'll start cooling down quickly and it'll be harder to mix.
- Once they are combined enough, transfer to the pan and press them down slightly in the pan until the pan is full. You may have a little extra leftover, enjoy it.
- Allow the rice krispie treats to cool then using the parchment paper, lift them out of the pan. Slice them up into squares and enjoy.
