Quick tip on the chocolate
I understand that the photos show semi-sweet chocolate to cover the pecan pie balls. However, through trails I feel that white chocolate is better if you enjoy it. The semi-sweet chocolate almost overpowers the pecan pie center.
Storage
These will sit fine on the counter fine as long as the chocolate has set. For beginners, white chocolate sets a lot better than semi-sweet or milk chocolate due to tempering.

Pecan Pie Balls
Ingredients
- 1 cup graham crackers (7-8 graham crackers blended)
- 1 cup light brown sugar
- 1/2 cup maple syrup
- 4 tablespoon butter
- 2.5 cup pecan (finely chopped)
- 2 cup semi-sweet chocolate
Instructions
- Start by pulsing the graham crackers in a food processor until they are completely crumbled finely.
- Add them to a bowl, now add in the brown sugar, vanilla, maple syrup and the butter. Mix everything until combined then stir in the pecans. Now, use a large cookie scoop and roll them into balls onto a sheet pan lined with parchment paper.
- Place in the fridge for 30 minutes. When the time is up, melt half the chocolate in a bowl in the microwave in increments of 30 seconds, stirring in-between each interval. Once melted, remove from the microwave and add in the remaining chocolate. Stir until the remaining chocolate has melted in with the other chocolate.
- Lastly, roll the balls in the melted chocolate then set them back on the sheet pan and allow the chocolate to set. If it's not setting quickly, add them to the fridge.
