Parmesan crusted fish is popular due to how easy it is to make with an amazing flavor of a garlic, crunchy breading on top of your favorite fish white fish such as cod or tilapia.
Falling in love with parmesan topping since my parm crusted steak copycat recipe. I honestly never knew anything of it after all my visits to steak house. Now, I’m obsessed! The crunchy, parmesan and breading adds something special to this fish recipe. A crust loaded with a great garlic butter flavor on top of savory fish. All made in under 30 minutes.
Can I Use Frozen Or Fresh Fish
Frozen or fresh fish work perfectly in this recipe. If using frozen fish just be sure to thaw first. Due to the quickness of this recipe if placed in the oven frozen not only will it wash away some flavor but will also not cook through before the crust burns.
How To Bake Fish
When baking fish it’s easy to be confused as to how hot to set the oven. From my experience baking any fish at a high baking heat always works best. Fish will release water while cooking. Not to say you can’t bake fish at 350ºF or smoking fish at a low temperature. For example, a recipe such as this one the crust will not get crunchy at all at a low temperature. This recipe doesn’t require broiling due to the high heat. Your fish cooks through throughly and parmesan crust gets crispy in one round.
Can I Make It Ahead
This isn’t a recipe you can make ahead. It’s best made and served fresh. How to store the leftovers, you can place in a sealed container. For reheating, place back in the oven at 375ºF to give the fish time to warm up and not burn the crust. The crust won’t be as crispy but you will still get a crunch, I tested it!
How To Make Parmesan Crusted Fish
First, any type of white fish can be made with this recipe. To mention, in the photo I used frozen fish that I thawed out for ease. But, fresh or frozen works the same just make sure frozen is thawed.
Next, make the panko parmesan crust. Use breadcrumbs, grated parmesan, garlic, parsley and melted butter then mix together and set aside.
Then, on a baking sheet oil the sheet or line to prevent any possible sticking. Pat fish dry then spread a little oil to help the crust and seasoning stick. Lightly salt and pepper both sides of fish. Don’t over salt the fish this is just to season the fish itself.
Next, pat crust on top of fish. Press in for good contact. You can cover 3 fish with this recipe. Bake in preheated oven for 15-20 minutes. Remove allow to rest 5 minutes then serve.
Recipe Tips & Tricks
- For gluten free, use gluten free breadcrumbs. It’s very simple to do that. The breadcrumbs above are gluten free.
- How to make keto friendly, remove breadcrumbs and replace with pork panko if you want a crunchy crust. The crust is only 4g net carbs per fish but if you don’t want the extra carbs just skip the breadcrumbs all together. Note, the breadcrumbs are what gives the crunch to the crust.
- Thickness of fish matters. Most white fish is on the thin side but cod can be thicker and if fish is thick lower heat to 400°F to give fish time to cook through

Parmesan Crusted Fish
Ingredients
- 3 pieces Any white fish
- 2 tablespoon panko breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1-2 teaspoon parsley
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- olive oil to coat fish
- salt and pepper fish to taste
Instructions
- Preheat oven to 425°F
- Nutrition info is for parmesan crust only
- Combine breadcrumbs, grated parmesan cheese, garlic powder, parsely, salt and pour in melted butter. Give a good mix
- On a baking sheet line fish and brush with olive oil then sprinkle salt and pepper very lightly. Just enough to season fish
- Pat the crust on top of each fish and press in. The crust should stick with ease. Bake in preheated oven for 15-20 minutes. Check at 15 minutes because browning will happen fast.
