Ingredients
 

  • 1/2 medium yellow onion (diced)
  • 3 cloves garlic (minced or pressed)
  • 3-4 ears sweet corn (sub with 15oz can or 1.5 cup frozen corn)
  • 6 ounce cream cheese (room temp)
  • 1/3 cup mayo
  • 1/3 cup sour cream
  • 1 lime (squeezed)
  • 1/2 cup cotija cheese (crumbled & more to taste)
  • 1/4 cup cilantro (chopped & more to taste)
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • salt & pepper to taste

Instructions
 

  • To start, sauté the onion and garlic in a little oil until brown bits have form and the ingredients have softened. Prep the corn by grilling it so that it's a bit charred.
  • Cut the kernels from the cob and sat to the side for later.
  • Mix and cream together the cream cheese, mayo and the sour cream. The fold in the corn, onion, garlic, and the seasonings provide.
  • Taste and adjust to your likings before serving.
