Ingredients

  • 1/2 medium yellow onion diced
  • 3 cloves garlic minced or pressed
  • 3-4 ears sweet corn sub with 15oz can or 1.5 cup frozen corn
  • 6 ounce cream cheese room temp
  • 1/3 cup mayo
  • 1/3 cup sour cream
  • 1 lime squeezed
  • 1/2 cup cotija cheese crumbled & more to taste
  • 1/4 cup cilantro chopped & more to taste
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • salt & pepper to taste

Instructions

  • To start, sauté the onion and garlic in a little oil until brown bits have form and the ingredients have softened. Prep the corn by grilling it so that it's a bit charred.
  • Cut the kernels from the cob and sat to the side for later.
  • Mix and cream together the cream cheese, mayo and the sour cream. The fold in the corn, onion, garlic, and the seasonings provide.
  • Taste and adjust to your likings before serving.
