Mexican street corn dip is a great appetizer or party food that quick to whip together. Everyone will love the blend of the flavors in this summer style dip.
3-4earssweet corn(sub with 15oz can or 1.5 cup frozen corn)
6ouncecream cheese(room temp)
1/3cupmayo
1/3cupsour cream
1lime(squeezed)
1/2cupcotija cheese(crumbled & more to taste)
1/4cupcilantro(chopped & more to taste)
1tablespoonchili powder
1tablespoonsmoked paprika
salt & pepper to taste
Instructions
To start, sauté the onion and garlic in a little oil until brown bits have form and the ingredients have softened. Prep the corn by grilling it so that it's a bit charred.
Cut the kernels from the cob and sat to the side for later.
Mix and cream together the cream cheese, mayo and the sour cream. The fold in the corn, onion, garlic, and the seasonings provide.
