Mediterranean cucumber salad is the perfect choice for a healthy and light salad that’s easy to make in less than 30 minutes.
You’ll need these ingredients first
- Cucumber
- Tomato
- Red onion
- Olive Oil
- Red wine vinegar
- Parsley
- Dried oregano
- Apple cider vingear
- Salt & black pepper

- Feel free to swap the vinegar out for fresh lemon juice in this recipe.
- In the photos I used roma tomatoes. However, they are a great choice for a neutral flavor. But, grape and cherry tomatoes pack a bit more sweetness with them, have fun.
Storing the cucumber salad
Storing cucumbers isn’t the best when they are in a salad. They don’t last long. You may be able to get the salad to 3 days max before the cucumbers become super mushy. This isn’t a recipe to be frozen. But, be sure to store the Mediterranean cucumber salad in a sealed or covered container.
A quick tip, you can always pour out any excess liquid then add in some olive oil and red wine vinegar and re-season to taste as you store the leftovers.

Mediterranean Cucumber Salad
Ingredients
- 2 cucumber, peeled and diced
- 2 roma tomatoes, diced
- 1/2 medium red onion, sliced or diced
- salt & black pepper to taste
Vinaigrette
- 1/4 cup olive oil
- 3 tablespoon red wine vinegar
- 1/4 cup parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon apple cider vinegar
Instructions
- To start, peel the skin from the cucumbers then slice the cucumber into quarters. This step is optional but it will help with excess water. Salt the cucumbers heavy then cover them for 30 minutes. At 30 minutes, drain and rinse the excess salt from the cucumbers and pat them dry.
- Dice up the tomatoes and slice the red onion. To add, putting the sliced onion in warm water for 15 minutes will take some of that strong bite off as well.
- In a small bowl, add olive oil, red wine vinegar, apple cider vinegar, dried oregano and chopped parsley. Mix well.
- In a large bowl with the cucumbers, tomatoes and onions for the vinaigrette over and mix well.
- Lastly, season to taste with salt and black pepper.
