- Pasta: Any pasta will work for this recipe. You can even swap it out for cooked rice. The pasta will make the marry me chicken soup more filling.
- Tomato paste: Gives the broth the rich red color and compliments the sun-dried tomatoes. It also doubles as a thickener in the place of flour.
- Heavy cream: A key ingredient in the creaminess of the soup itself. You can’t just use milk in the place of it because it provides more than just flavor. The creaminess is also a very important factor of the “marry me” theme in recipes.
Chef’s tips
- I suggest garnishing it with parmesan cheese instead of adding it into the sauce. Parmesan is not the best melting cheese and can vary from brand to brand. A good brand will blend great but a bad brand the cheese will settle to the bottom making a mess.
- If you know there will be leftovers, separate what you will eat that night from what will be store for later. Then, the part that you’re serving that night is the portion you add the pasta noodles to. If you add the pasta into the entire recipe and try to save some for later. Marry Me Chicken Soup
Marry me chicken soup with a Tuscan style creamy sauce and added rotini pasta. The flavors of sun-dried tomatoes, fresh basil in a creamy sauce with juicy chicken is a soup you can't miss.
Ingredients
- 1 pound shredded chicken
- 3-4 ounce sun-dried tomatoes (chopped)
- 1 medium yellow onion (diced)
- 4 cloves garlic (minced or pressed)
- 3 ounce tomato paste
- 4 cup chicken broth
- 1/4 cup basil (chopped )
- 2 cup rotini pasta (dry)
- 2 teaspoon Italian seasoning
- 1/2 cup heavy cream
- salt & pepper to taste
- parmesan for garnish
Instructions
- To start, prep all the ingredients.
- Then in a large pot, sauté the diced onion and garlic. When they are soft, and browning add in the chopped sun-dried tomatoes and basil.
- Next, add in the tomato paste and cook within the ingredients for a minute. Add in the shredded chicken then pour the chicken broth in.
- Bring the broth to a boil then lower it to a simmer. Add in a little salt and pepper along with the Italian seasoning.
- Add in the rotini pasta. Cook the pasta for the length of time according to the package instructions. Which is normally 10-12 minutes.
- Once the pasta is cooked you can turn off the heat. Pour in the heavy cream. And lastly, add the final touches of salt and pepper to taste.
- Serve with a garnishing of parmesan cheese.
