Ingredients needed
- All-purpose
- Zucchini
- Lemon
- Butter
- Milk
- Egg
- Granulated sugar
- Powdered sugar
- Baking powder

Grate the zucchini and don’t worry about squeezing or getting rid of the excess water. Grate then move to the next step.

Making the lemon zucchini bread recipe
- First, preheat the oven to 350F.
- Now, mix the butter and the sugar together. Then, add in the eggs. After, mix in the milk. In another bowl, toss in the flour, baking powder, salt and the lemon zest. Next, combine the dry and wet ingredients. Lastly, fold in the zucchini.
- Pour the batter into a lined loaf pan and place into the oven. Bake fro 50-60 minutes depending on your oven until the zucchini bread is cooked all the way through.
- Remove the cake from the oven and allow it to cool fully. While cooling, make the icing. After making the icing, this is the best time to pour over the bread because it will thicken and harden more with time.
- After the lemon zucchini bread is cooled, slice, serve and enjoy.

- 12 tablespoon butter, melted (equiv. 1.5 sticks of butter)
- 1 cup granulated sugar
- 3 large egg
- 3/4 cup milk
- 2.25 cup all-purpose flour (270g)
- 1.5 teaspoon baking powder
- 3/4 teaspoon salt
- 1 tablespoon lemon zest
- 1.5 cup zucchini, grated
Icing
- 1 cup powdered sugar
- 3 tablespoon lemon juice
